Allow us the pleasure of introducing you to Dalia, for dining at its finest. To be sure, the cuisine is beyond compare, yet the ambience shares the spotlight while simultaneously taking center stage as the pinnacle of elegance and natural beauty that is nothing short of a breath-taking sight to behold. Imagine if you will, encountering a floral floating garden merging with a sensational gourmet feast that tantalizes your gustatory senses with pure succulent delights, that is the essence of Dalia.

If you build it, they will come. This phrase that has long been a part of the English speaking nomenclature is especially and uniquely apt to how the restaurant Dalia was spawned. "The restaurant project began construction in September, 2021. However, the evolution of the concept began following the stellar performance of the Viceroy Hotel and Resort since 2020 even with the pandemic ruling the world." according to Viceroy Director of Operations Martin Rodriguez. "Dalia is a powerful name, and it has two meanings. Firstly it is the National Mexican flower. Also it is a woman's name, soft and tender, but strong at the same time. Dalia is Mediterranean food; however, usually people associate it with Spanish and Italian food. Nevertheless our amazing chef Carlos Teran includes recipes from Morocco, Greece and the eastern side of the Mediterranean Sea."


In 1963, President Adolfo López Mateos decreed that the Dalia, one of Mexico’s numerous “gifts to the world”, should be the nation’s national flower. Today you can find Dalia's flowering in gardens throughout the country. It is a member of the Asteraceae, related to the sunflower and the chrysanthemum. And so it remains today – a perfect symbol of beauty and diversity. This flower comes from the regions of Cuernavaca and Tepoztlán, in Mexico. The specific name adopted, "Dahlia Variabilis", indicates the characteristic of spontaneously producing new forms. More than two thousand different varieties of this plant are known.


Rodriguez eloquently reveals "Just as no flower is the same, there is no restaurant quite like Dalia. This outdoor garden dining experience is where Mediterranean flavors flourish, with a creative Los Cabos twist. Follow the winding water pathways and find yourself in the company of native plants and citrus trees. Refined and relaxed, the sprawling terrace is where garden beauty seems to stretch infinitely. At night, Dalia transforms into a destination spot that invites you to linger over handmade pasta and fresh seafood in the light of the full moon."


Dalia is open from 6:00 p.m to 10:00 p.m. However, Viceroy guests can partake in the menu as a room service option until later in the evening. The restaurant also features top shelf live music on Thursday evenings.
